This dish has a little of everything. The photo above is provided only as an illustration.
Ingredients
- 280g Fettucini
- 400g beef or pork - sliced for stir-fry and marinated in soy sauce, garlic & pepper - for vegetarian option, substitute meat with tofu, TVP and/or finely diced mushrooms.
- 1/2 onion, sliced
- 100g green beans
- 1 packet of supermarket fine cut coleslaw approx 300g
- 2 medium zucchini - julienned
- 2 cloves garlic
- 1 can diced tomatoes
- Mixed herbs, chili flakes
Method
- Stir-fry meat or substitute with mushrooms and set aside.
- Start boiling the pasta which should take about 15 mins.
- Stir-fry onions and beans until about half-cooked and then add zucchini and coleslaw and continue stir-frying for a few minutes.
- Add tomatoes and mixed herbs, salt & pepper and chili flakes to taste, continue cooking until cooked.
- When the pasta is ready, drain and combine all ingredients into a large serving bowl.
- Server with crusty bread and grated Parmesan cheese.
