Fettucini with Sliced Cabbage


This dish has a little of everything. The photo above is provided only as an illustration.

Ingredients
  • 280g Fettucini
  • 400g beef or pork - sliced for stir-fry and marinated in soy sauce, garlic & pepper - for vegetarian option, substitute meat with tofu, TVP and/or finely diced mushrooms.
  • 1/2 onion, sliced
  • 100g green beans
  • 1 packet of supermarket fine cut coleslaw approx 300g
  • 2 medium zucchini - julienned
  • 2 cloves garlic
  • 1 can diced tomatoes
  • Mixed herbs, chili flakes

Method
  1. Stir-fry meat or substitute with mushrooms and set aside.
  2. Start boiling the pasta which should take about 15 mins.
  3. Stir-fry onions and beans until about half-cooked and then add zucchini and coleslaw and continue stir-frying for a few minutes.
  4. Add tomatoes and mixed herbs, salt & pepper and chili flakes  to taste, continue cooking until cooked.
  5. When the pasta is ready, drain and combine all ingredients into a large serving bowl.
  6. Server with crusty bread and grated Parmesan cheese.
