Prawn and Mushroom Fettuccine


The principle ingredients for this dish are the Prawns and Mushrooms, and the green vegetables can be anything that you like to add.

Ingredients
  • 250g fettuccine - spinach or plain 
  • 250g peeled prawns
  • 250g large mushrooms, thickly sliced
  • 1/2 onion, thickly sliced
  • 50g butter of margarine
  • large pinch of finely chopped parsley or mixed herbs
  • Pre-cooked/grilled green vegetables -  eg. 2 bunchs of green asparagus or broccolini, 3 zucchini, or a large handful of snow peas
  • 2 cloves of garlic, finely chopped
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 4 crusty bread rolls

Method
  1. Pre-prepare the green vegetables by steaming or grilling
  2. Bring the water to the boil and add the fettuccine 
  3. Stir-fry the onions and mushrooms in a little oil
  4. When almost cooked, add the butter, garlic, prawns, parsley, with a little salt and pepper to taste and set aside.
  5. When the pasta is cooked, drain and combine with the other ingredients and serve with grated Parmesan cheese and a crusty bread roll.
