The principle ingredients for this dish are the Prawns and Mushrooms, and the green vegetables can be anything that you like to add.
Ingredients
- 250g fettuccine - spinach or plain
- 250g peeled prawns
- 250g large mushrooms, thickly sliced
- 1/2 onion, thickly sliced
- 50g butter of margarine
- large pinch of finely chopped parsley or mixed herbs
- Pre-cooked/grilled green vegetables - eg. 2 bunchs of green asparagus or broccolini, 3 zucchini, or a large handful of snow peas
- 2 cloves of garlic, finely chopped
- Salt and pepper to taste
- 1/2 cup freshly grated Parmesan cheese
- 4 crusty bread rolls
Method
- Pre-prepare the green vegetables by steaming or grilling
- Bring the water to the boil and add the fettuccine
- Stir-fry the onions and mushrooms in a little oil
- When almost cooked, add the butter, garlic, prawns, parsley, with a little salt and pepper to taste and set aside.
- When the pasta is cooked, drain and combine with the other ingredients and serve with grated Parmesan cheese and a crusty bread roll.
