Kafta with Roast Vegetables

This meal is based on the Middle Eastern style of cooking. It consists of:

BBQ kafta
Minced lamb mixed with herbs and spices, moulded onto skewers and then slow BBQ'd.

Vegetables
Bean and tomato ragout
BBQ'd eggplant

Accompaniments
Steamed brown rice dressed with fried onions

BBQ Lamb

The main focus of this meal is BBQ marinated boneless lamb which is now commonly available from supermarkets or some butchers.

BBQ the lamb for 45-60 minutes on a low setting which aims to crisp the outside, while maintaining a very moist and just-cooked interior. It can then be sliced at the table and served with a range of complimentary dishes.
