This recipe for Greek style Kofta is based on the pre-packaged spice ingredients produced by Knorr, but can easily be made from scratch. Serves 4.
Ingredients
- Spice Mix: salt, pepper, cumin, oregano (or mixed herbs), allspice, cinnamon and nutmeg.
- 400 g ground beef
- 1-2 cans of diced tomatoes
- 1/2 onions - roughly diced
- 2 zucchini - diced in 2cm pieces
- 2 carrots - diced in 2cm pieces and lightly steamed
- 6-10 button mushrooms - halved
- 1 tablespoon of oil
Preparation
- Mix half of the Spice Mix into the minced meat and roll into 8 50g balls
- Fry the meat balls until browned on the outside and set aside.
- Start cooking the rice.
- Fry the onion, zucchini and mushrooms in another pan until browned.
- Return the meat balls pan to the heat and add 1-2 cans of crushed tomatoes and the remainder of the Spice Mix - add chilli and paprika to your taste.
- Add the fried vegetables to the meat dish when almost done and heat through for 1-2 minutes.
- Serve with the the rice separately.
Variation:
Garnish the dish with 50 grams diced feta cheese and fresh parsley.
Vegetarian Option:
Replace the meat with additional zucchini and mushrooms and 1 medium diced eggplant and/or vegetarian meat replacement.
