Greek Style Kofta



This recipe for Greek style Kofta is based on the pre-packaged spice ingredients produced by Knorr, but can easily be made from scratch. Serves 4.

Ingredients

  • Spice Mix:  salt, pepper, cumin, oregano (or mixed herbs), allspice, cinnamon and nutmeg.
  • 400 g ground beef 
  • 1-2 cans of diced tomatoes
  • 1/2 onions  - roughly diced
  • 2 zucchini - diced in 2cm pieces
  • 2 carrots - diced in 2cm pieces and lightly steamed
  • 6-10 button mushrooms - halved
  • 1 tablespoon of oil


Preparation

  1. Mix half of the Spice Mix into the minced meat and roll into 8 50g balls
  2. Fry the meat balls until browned on the outside and set aside.
  3. Start cooking the rice.
  4. Fry the onion, zucchini and mushrooms in another pan until browned.
  5. Return the meat balls pan to the heat and add 1-2 cans of crushed tomatoes and the remainder of the Spice Mix - add chilli and paprika to your taste.
  6. Add the fried vegetables to the meat dish when almost done and heat through for 1-2 minutes. 
  7. Serve with the the rice separately. 

Variation:
Garnish the dish with 50 grams diced feta cheese and fresh parsley.


Vegetarian Option:

Replace the meat with additional zucchini and mushrooms and 1 medium diced eggplant and/or vegetarian meat replacement.
