Salsa verde




There are many versions of "salsa verde" or Italian green sauce - this is but one of them. It is mainly used as an accompaniment to cold or roast meats.

Ingredients 
  • 1 bunch of flat parsley, finely chopped
  • 2 boiled eggs, finely chopped
  • 4-6 anchovies depending on your taste
  • 1 clove of garlic, finely chopped
  • 1-2 tablespoons of olive oil
  • 1-2 tablespoons of red wine vinegar
  • 1-2 tablespoons of lemon juice
  • Salt and pepper to taste
  • NOTE: the ratio of ingredients can be varied according to your own taste, and other ingredients such as basil or capers can be added to modify the flavour.

Method
  1. Combine all ingredients in a bowl, blend if you cannot chop everything finely, or if you prefer it to be smoother.
