This is a healthy snack and good for stomach ailments. This is best made on a BBQ hotplate or large flat frypan.

- 1 knob of fresh ginger - more for a stronger flavour
- 2 stalks of shallots (scallions)
- 4 eggs
- 1 teaspoon sesame oil
- Pepper & salt to taste
- Soy or soy & chili dipping sauce
Method
- Shred the ginger and shallots and fry lightly in a little sesame oil.
- Lightly mix the eggs to break the yolks and combine with the fried ginger and shallots.
- Pour the mixture onto the hotplate or frypan on medium heat so that it is less than 5mm thick.
- Flip as soon as it's cooked on the first side, and then remove to a plate and cut into 5cm rectangles. You may have to do this a couple of times to use all of the mixture.
