Ginger Omelette

This is a healthy snack and good for stomach ailments. This is best made on a BBQ hotplate or large flat frypan.

Ingredients

  • 1 knob of fresh ginger - more for a stronger flavour
  • 2 stalks of shallots (scallions)
  • 4 eggs
  • 1 teaspoon sesame oil
  • Pepper & salt to taste
  • Soy or soy & chili dipping sauce
Method
  1. Shred the ginger and shallots and fry lightly in a little sesame oil.
  2. Lightly mix the eggs to break the yolks and combine with the fried ginger and shallots.
  3. Pour the mixture onto the hotplate or frypan on medium heat so that it is less than 5mm thick. 
  4. Flip as soon as it's cooked on the first side, and then remove to a plate and cut into 5cm rectangles. You may have to do this a couple of times to use all of the mixture.
